Breakfast: Easy Ricotta Pancakes

Even the littlest members of the family can make this breakfast treat for mum.

Serves 4

Ingredients

  • 2 cups of self-raising flour
  • 2 eggs
  • 1/2 cup ricotta
  • 1 cup milk
  • 1-2 Tablespoons butter for cooking

Method

In a large bowl add the flour. Make a well in the centre, add eggs and ricotta. Stir with a fork to combine. Take a wooden spoon. Continue to stir, incorporating the flour. Pour in the milk bit by bit until the ingredients form a smooth batter.

Heat a frying pan to medium heat. Melt a tablespoon of butter, and pour 2 -3 small-sized pancakes into the pan. When bubbles rise to the surface flip the pancake. Cook until pancakes are golden brown on each side.

Melt more butter as you need it between batches. Repeat until all of the batter is used and you have a stack of pancakes for Mum to enjoy.

Serve with maple syrup, or honey, and a bowl of Mum's favourite fruit. Bananas, raspberries, strawberries or blueberries work well.
