Ingredients
Serves 4
- 2 cups of self-raising flour
- 2 eggs
- 1/2 cup ricotta
- 1 cup milk
- 1-2 Tablespoons butter for cooking
Method
- In a large bowl add the flour. Make a well in the centre, add eggs and ricotta. Stir with a fork to combine. Take a wooden spoon. Continue to stir, incorporating the flour. Pour in the milk bit by bit until the ingredients form a smooth batter.
- Heat a skillet to medium heat. Melt a tablespoon of butter, and pour 2 -3 small-sized pancakes into the pan. When bubbles rise to the surface flip the pancake. Cook until pancakes are golden brown on each side.
- Melt more butter as you need it between batches. Repeat until all of the batter is used and you have a stack of pancakes for Mum to enjoy.
- Serve with maple syrup, or honey, and a bowl of Mum's favourite fruit. Bananas, raspberries, strawberries or blueberries work well.
