Simple Cherry Compote

 

This homemade cherry compote is a simple way to turn fresh cherries into something special. Sweet, glossy and bursting with rich fruit flavour, it’s perfect for spooning over yoghurt, pancakes, waffles, porridge or ice cream. It also makes a beautiful topping for cakes, tarts, cheesecakes and other creamy desserts.

Ingredients
Makes approx. 300ml

  • 300g fresh cherries, pitted
  • 2 tablespoon maple syrup
  • pinch of salt
  • 1/4 teaspoon vanilla essence

Instructions

  1. Roughly chop the cherries, and place them in a medium-sized saucepan (we found the Essteele Per Vita 2.8L saucepan to be a perfect size), then add the maple syrup and salt.

  2. Stirring occasionally over medium-high heat, bringing the mixture to a boil (approx. 5 mins).

  3. Once boiling, reduce the heat and simmer, stirring occasionally until the liquid has reduced by half (approx. 5 mins).

  4. Remove the mixture from the heat and allow it to cool completely.
