COOKING WITH STAINLESS STEEL

Do I need to cook differently with stainless steel cookware?

Yes you do. The main thing is that you will need to preheat your pan before adding oil or butter. This enables the metal to expand and the pores of the steel to shrink. If you do not preheat your pan, food is likely to ‘pinch’ to the surface of the pan, and it will stick.

How do I know if my pan is hot enough?

To check if your pan has been preheated sufficiently, drop a small amount of water onto the pan. If it beads up and glides over the surface, your pan is hot enough and you can start cooking. Another tip is also to ensure your food is at room temperature before you start cooking. Big differences in temperature between your food and the pans surface will increase the chances of the food sticking.

The tri-ply clad construction includes a layer of aluminium, which allows the pan to conduct and retain the heat. Once the desired heat is reached, you can cook on a lower heat setting than you would do with a traditional aluminium nonstick pan.

What are the benefits of stainless steel cookware?

One of the biggest advantages of cooking with stainless steel is the ability to sear meat and vegetables on high heat and to create golden colour and that add a beautiful crisp finish

Caramelised pieces will stick to the pan and that’s nothing to worry about. This is called ‘fond’ and it doesn’t mean you have burnt your food. You can deglaze the fond by using vinegar, citrus juice or wine to create a beautiful flavoursome sauce or jus.

Do I need to season my stainless steel pan?

No there is no need to season your pan. Food shouldn’t
stick if your pans are preheated. Stainless steel is designed for immediate use. And after washing the pan with soap, you will
remove any seasoned layer.

GENERAL

What is multi-clad, tri-ply or clad cookware?

Clad Cookware refers to pots and pans made from multiple layers of metal bonded together. These layers typically consist of stainless steel with aluminium or copper sandwiched in between. The purpose of cladding is to combine the strengths of different metals, such as the durability of stainless steel and the superior heat conductivity of aluminium or copper.

Tri-ply Cookware is a specific type of clad cookware that consists of three layers: an aluminium or copper core sandwiched between two layers of stainless steel. The term "tri-ply" indicates the three layers of metal used in the construction of the cookware. This construction allows for even heat distribution across the cooking surface and throughout the cookware, resulting in more consistent cooking results.

Multi-clad Cookware is a broader term that encompasses cookware with more than 2 layers of metal. While tri-ply cookware has three layers, multi-clad cookware may have additional layers of different metals, such as stainless steel, aluminium, and copper. The additional layers can enhance the cookware's performance in terms of heat distribution, durability, and responsiveness to temperature changes.

What are the benefits of clad cookware?

The advantage of using copper or aluminium in the middle is ‘heat conductivity’. While steel is dependable and exceptionally durable, it’s doesn’t conduct heat very well, which is of course important in cooking. Aluminium and copper are very good conductors of heat and including a layer of these materials, will ensure great heat conductivity.

With the multi-clad construction, you will have the best of both worlds: durable and strong combined with great heat conductivity!

What is the difference between clad and copper base cookware?

Per Amore consists of two layers of high-quality stainless steel with an aluminium sheet in the middle. Some products, for instance our other range Per Vita have a sheet of copper in between the layers of stainless steel.
